- 500 g of Linguini
- 30 sea urchins
- 500 g mature tomatoes
- 1 clove of garlic
- 1/2 dl of extra-virgin olive oil
Heaten the extra-virgin olive oil in a pan, together with the clove of garlic. When golden, take off the garlic and add tomatoes without skin, seed and cut in bits. Add salt and pepper and add some water with a ladle. Leave it to cook for 15 minutes.
In the meantime, gently open the sea urchins and take the pulp with a teaspoon, putting it into a bowl and leave it there.
Boil the linguini in salty water, drain and put them in the pan with the tomatoes, then add the sea urchins pulp and pan fry it all for a few minutes. If necessary, add some cooking water.
The dish is now ready to be served and….Enjoy your meal!
